Maple Bourbon Muffins

Batter*

1 stick of browned butter

1/3 cup maple syrup

1/4 packed brown sugar

1/3 cup heavy cream

1 scraped vanilla bean

1 tbsp bourbon

1 tsp baking soda

1 tsp salt

2 ~ cups almond flour

1 ~ tbsp cinnamon sugar

3 eggs

Final NOTES

Be sure to brown the butter! It’s a small extra step and it’s totally worth it!

if you want to make this vegan, flax eggs and canned (full fat) coconut milk/oil should do nicely.

Cook the vanilla bean in your browned butter!

if you want more spice you can add 1 tsp cinnamon, 1/2 tsp of nutmeg and 1/4 tsp cloves to the batter!

Almond flour can be tricky to bake with because the moisture level of the flour can vary so greatly. you want a thick texture that just barely runs like a typical cake batter.

i like using a 4:1 ratio for the cinnamon sugar.

Bake at 350º for 23 ~ minutes. i use a 6 slot jumbo muffin pan, and they come out perfectly.

* You can cut the spices and add 1 ~ cup chocolate chips for a fantastic variation (be sure to bake just a little longer). toasted pecans (always toast!) do nicely here too.
